Integrated approach to food quality

The general goal of the QualiSud research unit is to develop an integrated approach for controlled and sustainable production of foods with optimum organoleptic, sanitary and nutritional properties. QualiSud works on food processing, from post-harvest or slaughter techniques to assessments of sensory quality, nutritional quality, health benefits, safety and technological properties.
