Les thèmes de recherche principaux de l'UMR Sciences pour l'œnologie couvrent i) la biologie intégrative des levures industrielles et le contrôle de la fermentation alcoolique ii) la biosynthèse, la structure, la physico-chimie et les interactions des composés phénoliques et iii) la biosynthèse des flavonoïdes et sa régulation. De fortes interactions avec l'Unité expérimentale de Puech-Rouge (UE 999) donnent la possibilité de conduire des projets de recherche jusqu'au stade pilote ou préindustriel (fermentation, fractionnement des composants de la baie, stabilisation des vins...) formant ainsi une structure unique en termes d'innovation et de transfert
