Folates behavior during the soaking-cooking process of cowpea seeds

Abstract

This 3-month scientific mobility aims at increasing our knowledge about the physicochemical behavior and reactivity of vitamins B9 (also called folates) inside cowpea seed (cf Project 1507-031 ICOWPEA (WP2))- This objective can be achieved through a partnership with the research team of Prof. Rychlik, from TUM (Technische Universität München) (Munich, Germany) which is specialized in folates in food. In addition, these research activities being as part of the project ICOWPEA, the PhD student that undertakes this
mobility in Germany will also attend the ICOWPEA project annual meeting that will take place in Cotonou (Benin) from June 19th to June 21st 2018 to present her results about folate behavior in cowpea. In order to strengthen our collaborations and think about building new projects between CIRAD/QualiSud research unit and TUM but also advance in our joint paper, Prof. Rychlik, a professor specialized in folate behavior from TUM
