Abstract

Hosting of a Fellow Award (Catherine Ebah) in order to contribute to the inventory of the variability of the quality of attiéké produced in the 4 or 5 main production areas of Côte d’Ivoire on the basis of the quality assessment methodology previously developed. This project has 3 specific objectives:
(i) To improve the methodology for assessing the quality of attiéké through the combined use of sensory and instrumental methods
(ii) To study the links between sensory descriptors and instrumental measurements in order to predict, if possible, sensory quality from rapid instrumental measurements
(iii) Increase the shelf life of the product by using new preservation methods
