Abstract

Physicochemical, physical and strctural analysis of plantain flour and starch during development (in the week 2 to 8 range) as following:
- mineral analysis
- sioluble sugar analysis by HPAE-PAD
- starch and resistant starch content
- Optical and environmental microscopy analysis
- strcutural analysis by size excluision chromatography
- Differential scanning calorimetry analysis
- RVA profile
- X ray diffraction analysis
