Sciences for oenology

The research conducted within the SPO unit is aimed at better understanding the mechanisms involved in wine production.
Its research areas include:

  • Integrative physiology of wine yeasts and the management of alcoholic fermentation
  • Biosynthesis and the polyphenol and polysaccharide content of grapes and wine
  • Analysis of the phenolic structures, their reactivity, their interactions and their assemblies
