Valrhona is a French agri-food company and trademark, specialising in cocoa processing. On 15 October 2015, Agropolis Fondation and Valrhona signed a partnership agreement in order to support the research project CHAMAN – Predicting the “chocolate” organoleptic potential of a cocoa sample. The main objective of this project is to establish a method to directly predict the “chocolate” potential of cocoa without going through the process of tasting the associated chocolate.

The research areas that concern the Foundation are:

  • management of processing technologies;
  • the integrated approach to the quality of food and non-food products.
    This project is coordinated by the QUALISUD research unit.
